Toplu yiyecek üretimi gerçekleştiren işletmelerde fiziki mutfak planlaması

Abstract

Bu araştırmanın amacı toplu yiyecek üretimi gerçekleştiren işletmelerin fiziki mutfak planlamasının incelenerek yeterliliklerinin saptanması ile bu işletmelerde üst düzey pozisyonda görev alan kişilerin konu hakkındaki görüşlerinin ortaya çıkarılmasıdır. Araştırma verilerinin toplanmasında yüz yüze görüşme tekniği kullanılarak toplu yiyecek üretimi yapan işletmelerin mevcut fiziki mutfak planlamaları ve süreci hakkında bilgi toplanmıştır. Araştırmada örnek olay tarama yöntemi kullanılmış ve veri toplama tekniği olarak açık uçlu sorulardan oluşan yapılandırılmış bir görüşme formu kullanılmıştır. Toplu yiyecek üretimi yapan işletmelerde fiziki mutfak planlamasında en çok dikkat edilen hususların “işleyişin hızlı olması”, “verimliliği olumlu etkilemesi”, “maliyet, ergonomi”, “işleyişe-üretim hızına”, “mekân kullanımı”, “hijyen ve verimlilik”, “uygulanabilir olması”, “personel isteği”, “işleri kolaylaştırması” ve “ergonomi-işlevsellik” şeklinde tespit edilmiştir. Fiziki mutfak planlamasında toplu yiyecek üretimi yapan işletmelerde yaşanan sorunların “maliyet, personel niteliği, mesafe ve mekân” çerçevesinde olduğu görülmektedir.The purpose of this research is to examine the physical kitchen planning of the enterprises that perform mass food production and to determine their qualifications and to reveal the opinions of the people who take charge in these enterprises on the subject. In the collection of research data, information about the existing physical kitchen planning and process of the enterprises that produce mass food was collected by using the face-to-face interview method. Case study method was used in the research and a structured interview form consisting of open-ended questions was used as data collection method. The most important points in the physical kitchen planning in the enterprises that produce mass food are "processing fast", "positive effect on efficiency", "cost, ergonomics", "operation-production speed", "space use", "hygiene and efficiency", " applicable”, “staff demand”, “making work easier” and “ergonomics-functionality”. In the physical kitchen planning, it is seen that the problems experienced in the enterprises that produce mass food are within the framework of "cost, personnel quality, distance and space".
